What is livermush?
Livermush is a pork-based food associated with Western North Carolina cuisine. It’s prepared using pig liver, other pig parts, cornmeal and spices such as pepper and sage. Livermush is typically made in a large loaf and then sliced and fried. Some like it at breakfast with eggs, or made into a sandwich with plenty of yellow mustard.
